A sufficiently advanced bounty hunter can learn tricks on how to fight certain species. Learning how to hit their weak spots and how to protect yourself from them hitting yours. This sort of specialization requires memorization and training and isn't changed quickly. Additionally, you must have a member of that race available for you to study as it's hard to get everything from a datapad.
